The Roster tab in My Team is where you set a player's jersey number and positions. You can do this for any player, including one who has not accepted their invite yet.
How do I change a jersey number or positions?
- Select My Team, then the Roster tab.
- Select the player's row.
- In the edit drawer, update the jersey number and positions.
- Save.

Yes. You can set a jersey number and positions for a player with a Not Invited or Pending status. Those details carry over to their account when they accept.
Why do I not see all the positions I expect?
